Covid travel restrictions made my plans to teach English in Japan seem uncertain, so I took the opportunity to brush off my high school Spanish and catch a flight down to Quito, Ecuador! I spent the waiting period for my work visa backpacking around South America. I built my language skills working at a hostel in Quito while making friends from all over the globe and eating my bodyweight in tropical fruits.
